Para analizar las insuficiencias en el control de la calidad del proceso fermentativo alcohólico en la fábrica de vinagre “La Espirituana”, fue revisado y adaptado un trabajo antecedente en el Empresa Mixta “Río Zaza”. De enero 2010 a junio 2012 se analizaron datos estadísticos del % alcohol volumétrico real obtenido en el vino base, volúmenes de aguardiente promedio utilizados por cada mezcla alcohólica según balance de materiales, y se examinó el comportamiento promedio de los parámetros de calidad del azúcar crudo para vinagre. Fueron propuestos e implementados procedimientos operacionales en la fermentación alcohólica, que contribuyeron al incremento del grado de etanol de los vinos base, disminuyendo el consumo de aguardiente crudo y reduciendo el costo de producción en 0,22 CUP por $ 1,00 CUP de producción. Para evaluar la implementación se construyeron gráficos de dispersión y de control de julio 2012 a diciembre de 2014. Los resultados demostraron que la integración mediante el enfoque de proceso, posibilitó determinar la efectividad de las acciones de mejora continua, apreciado en el análisis de los costos, indicadores económicos- productivos, y beneficios por el ahorro de consumo del aguardiente crudo; así como en los parámetros físico-químico el incremento de grado alcohólico en vino base, reflejados en los gráficos de dispersión y de control respectivamente
An antecedent work in the Mixed Company "Río Zaza" was revised and adapted, in order to examine the inadequacies in the control of the quality of the alcoholic fermentation process in the "La Espirituana" Vinegar Factory. From January 2010 to June 2012, statistical data of the real volumetric alcohol percentage obtained in the base wine, volumes of hard liquor average used by each alcoholic mixture according to balance of materials, and the behavior average of the parameters of quality of the raw sugar for vinegar were analyzed. Operational procedures in the alcoholic fermentation were proposed and implemented. These procedures contributed to the ethanol grade increase of the base wines, diminishment of the consumption of hard liquor and reduction of the production cost in 0,22 CUP for $1,00 CUP of production. Graphics of dispersion and control from July 2012 to December of 2014 were built to assess the implementation. The results showed that the integration by means of the process approach, allowed determining the effectiveness of the actions of continuous improvement. This effectiveness is appreciated in the analysis of the costs, economic-productive indicators, and the benefits for the consumption saving of the hard liquor; as well as in the physique-chemical parameters the alcoholic grade increase in base wines, showed in the dispersion and control graphics respectively.
